The Oxitest reactor controlled by OXISoft™ software is able to provide high added-value information concerning fat oxidation processes in foods, oils and fats. Two separate titanium chambers analyze the same sample in duplicate or different samples at the same time and under the same conditions. Stability of the sample is evaluated by accelerating the oxidation process using high temperatures (from 20 to 110 °C) at pre-determined oxygen pressure. Oxidising fat consumes oxygen and the decrease in oxygen pressure allows unit to obtain useful information concerning the food sample.
